The chef
Xavier Blanc
Trained in hospitality (BTS), he worked in fine dining and then in brasseries, including three years working alongside a leading Parisian chef.
He set up shop in Soissons with a clear vision: straightforward cuisine, where the ingredients take centre stage.
He brings the high standards of fine dining to the restaurant: carefully selected seasonal produce, perfectly cooked dishes, and precise seasoning.
His cooking always starts with the produce itself, sourced as locally as possible from local producers. Vegetables, meats and cheeses come first.
The rest follows: bold flavours and nothing on the plate that doesn’t enhance the taste.
